Corn Salsa

Here's a recipe from the weekend.


Corn Salsa
2 cans white corn
2 cans chopped olive
1 bunch green onions chopped
1 green pepper, (diced)
¼ - ½ can jalapeño (diced)
1 T. vinegar
8 oz. Zesty Italian Dressing
Dash of Salt and Pepper
11-12 Roma tomatoes diced

Drain corn, olives and jalapeño’s. Dice onion, pepper and tomatoes. Mix together with remaining ingredients. Chill for 2 hours before serving. Leon adds Cilantro to taste. I usually make ½ batch for small groups.

Can you believe it...a whole year, yes a whole year waiting and now...we have to wait again! I have to say that I really do love getting together with "da gang", no matter how short of a time. And yes, recharging the batteries does help us go back out and face the world...but is the world ready to face us after this last weekend???

well it is true that I feel filled again to take on the world after this last weekend. I want to tell you all thanks for making this weekend a wonderful experience for me and Lisa. Stuffed Mushrooms

Stuffed Mushrooms

2 pkgs Fresh Mushrooms
2 pkgs cream cheese
2 pkgs Dry Italian Dressing mix
Jimmy Dean hot sausage.

Cook sausage. Mix sausage with above. Stem mushrooms and wash. Cut up stems and put in the above mixture. Put mushrooms in pan and cover with mixture. Cook at 450 for 45 to 60 minutes.

Beaver Creek 2008

Hey everyone! We had a ball up there! :) Too fun right? Todd spoke in church today. He talked about going to Beaver Creek. He said "Every thing we talk about begins and end with . . .
